Recipes–Roasted Artichoke

I have also decided to include recipes on this blog, as I am beginning to cook more and more and finding that I really enjoy it.

This is a really easy recipe.  If you’ve never tried artichokes, you SHOULD!  Artichokes are extremely healthy and contain 25% of the daily value of Vitamin C, 19% of Magnesium, 28% of Dietary Fiber, 8% of Iron…the list goes on.  They’re also delicious dipped in mayonnaise.

I used to cook artichokes in a rice steamer in the microwave, however, I recently decided to roast one, and it made ALL the difference.  The flavor is richer, the artichoke “meat” is tender.

Preheat the oven to 425.  Prepare the artichoke by rinsing it in water a few times (there will be a LOT of sand if you don’t) and then cut off the stem and the top inch of leaves.  You can trim off the stickers (which hurt) if you would like.  Use a garlic press to mash a clove of garlic and put it on top of the artichoke, then drizzle extra virgin olive oil on top.  Wrap the artichoke in two layers of aluminum foil and bake for an hour.  Leaves should come out easily when it’s done.
